ABOUT THE VINE & CELLAR
The grapes are hand-harvested and pressed at the estate, before fermenting and ageing in stainless steel tanks as well as barrels. The wine undergoes malolactic fermentation which gives it its flesh and it's then blended with 40% of the Solera reserve wines. The complexity here comes from a Solera wooden barrels where the reserve wines are kept for years (over a decade!), ready to be blended in order to maintain the house style over the years. The blended wine is bottled for the secondary fermentation and then aged a minimum of 60 months on the lees before disgorgement. There is no dosage, meaning no added sugar at all. This is the purest and dryest expression of Champagne.
ABOUT MAURICE GRUMIER
The Grumier family have been Champenois for many generations in Venteuil in the Marne Valley and since 1743 have been grape growers until two centuries later when they started bottling their own champagne. When Maurice took over the family vineyards he decided to focus into making it prosperous business and it was (and still is!) all about the quality of the fruit, therefore the wines. Fabien Grumier is now looking after the 8.5ha composed of over 50% of Pinot Meunier. The shift of the grower has lately been on the return of barrels in the cellar and lower dosage to exhibit the great work pursued in the vineyards and lower sugar means more refreshing and detailed Champagne in the glass.
