ABOUT THE VINE & CELLAR
Eric strongly believes that the work is mostly done in the vineyard and spends a lot of time and care looking after his vines all year long, with no chemicals and ancient techniques. He gets great results in both quality and quantity every single year! The grapes are hand-harvested and pressed at the small winery he built at home. Following the long spontaneous fermentation, the wine is raised on fine lees in tanks before being bottled the following year. This cuvée was bottled and labelled as an hommage to our friendship and collaboration since he started making wine.
ABOUT THE DOMAINE DE RONCEVAUX
A man dream became reality when Eric Saveret set up his own Domaine in 2000 after acquiring from his retiring father-in-law less than 5 ha in the Southern Maconnais, Burgundy. He realised that he was extremely lucky to have such old vines (over 100 years old) on some of the best terroirs of Pouilly-Fuisse, Macon & Saint-Veran and has never used any chemicals nor artificial yeasts. He's a fervent defender of non-interventionist winemaking and spends a lot of time working hard in the vineyard. His passion and self-driven enthusiasm have secured him already some sought-after achievements and this is only the beginning of his journey. The wines are some of the best expressions of his terroirs and we can't wait to see what he's up to produce next!
